Soft cheese pancakes

For the soft cheese pancakes
  • 250 g of full fat soft cheese or creamy gat cheese
  • 1 egg
  • approx. 80 g of plain flour
  • pinch of salt
  • a pinch of pepper
  • 1/4 teaspoon of oregano
  • 1/4 teaspoon of marjoram
  • dusting flour
  • frying oil
For the mushroom sauce
  • 2 tablespoons of butter
  • 1 tablespoon of oil
  • 400 g of mini chestnut mushrooms
  • 4 tablespoons of tomato paste
  • 1/2 cup of water
  • 2 cloves of garlic crushed
  • 1 teaspoon of smoked paprika
  • salt pepper

Method
 

For the soft cheese pancakes
  1. Put the white cheese, egg, flour and spices in a bowl and mix well. The mixed mass may be slightly sticky. Shape into a ball and divide into 4 parts. Shape each part into a round pancake shape. I used a special mold. Fry the pancakes in hot oil
For the mushroom sauce
  1. Put the mushrooms in the hot oil. Season with salt and fry. Add garlic and paprika. Fry for 1 minute. Pour over the water and simmer for about 5 minutes. Add the tomato paste. Simmer until the sauce is formed, at the end add the butter and mix well.
