Ravioli with meat filling

For the filling
  • 230 g of cooked in broth carrots
  • 190 g of cooked in broth parsley
  • 270 g of cooked in broth beef
  • 270 g of cooked chicken meat in broth
  • 1 onion diced
  • 3 cloves of garlic finely chopped
  • 3 tablespoons of oil
  • 2 tablespoons of tagine paste if you do not have it, give tomato paste mixed with nutmeg, ground cumin, sweet and smoked paprika
  • salt and pepper to taste
For the dumpling dough
  • 300 g of flour 00
  • 200 g of coarse flour
  • 1 cup of boiling water
  • 1 teaspoon of salt
  • 2 tablespoons of butter

Method
 

For the filling
  1. Fry the onion in a pan. Place the remaining ingredients in a blender, add the warm onion and blend until smooth. Set aside to cool.
For the dumpling dough
  1. Add the butter to the boiling water and let it melt. Combine the dough ingredients and knead the elastic dough.
  2. Cover them with a warm bowl and leave for an hour.
  3. For ravioli
  4. Divide pasta dough into fourths; roll 1 portion to 1/16-in. thickness. (Keep pasta covered until ready to use.) Cut round shape with glass .Put a teaspoon of stuffing on each piece of dough, fold in half and stick the dough together. Put on salted boiling water with the addition of a tablespoon of oil and cook for 2 minutes from the moment of rising to the surface
