Cod with pea puree

For pea puree
  • 500 g of frozen green peas
  • 2 medium-sized potatoes peeled
  • 2 tablespoons of butter
  • 3 tablespoons of single crea
  • salt
  • pepper
  • nutmeg
For cod
  • 400 g cod fillet
  • salt
  • pepper
  • lemon juice
  • 2 cloves of garlic crushed
  • 1 tablespoon of rapeseed oil
For the blue cheese sauce
  • 200 g blue cheese
  • 1 tablespoon of butter
  • 50 ml of dry white wine
  • 50 ml of sweet cream
  • salt
  • white pepper

Method
 

  1. Pea puree
  2. Cut the peeled potatoes into 4 parts. Boil in salted water. 5 minutes before the end of cooking, add the green peas. Cook together until tender. Strain. Place in a blender, add butter and cream. Season to taste with salt, pepper and nutmeg. Mix with a blender until smooth.
For cod
  1. Rinse the fish, dry it and sprinkle with salt.
  2. Rub the fish on both sides with garlic, lemon and oil. Prepare the tray. Place the fish on a parchment-lined tray. Cover. Bake covered for about 20 minutes at 180 degrees. At the end of cooking, uncover the dish - the fish will brown slightly.
For the blue cheese sauce
  1. Add the cheese to the melted butter in a saucepan and heat it up, stirring constantly. Add the wine and stir vigorously until the cheese is melted. Add cream and pepper.
