In a frying pan, heat the sugar, when it becomes liquid, add the butter and stir vigorously. Add plums to get caramel and mix thoroughly. Fry the plums for about 5 minutes, just to soften them. Set aside to cool down

Place all the ingredients for the pancake in the bowl of the blender and blend until smooth. Pour the prepared dough into a cast iron pan greased with butter. Place the plums on top of the cake. Put in an oven preheated to 180 C for about 25 minutes.
Serve the pancake sprinkled with powdered sugar and almond flakes
