Chocolate cake with pumpkin mousse

Składniki
  

For the chocolate cake

  • 100 g of dark chocolate min. 70%
  • 1 cup of boiling water
  • 2 cups of plain flour approx. 320 g
  • 1 level teaspoon of baking soda
  • 1 level teaspoon of baking powder
  • 1 cup of plain yogurt
  • 2 large eggs
  • 1/2 cup of rapeseed or grape seed oil approx. 120 g
  • 1 cup of sugar

For pumpkin mousse

  • 600 ml double cream
  • 425 ml of pumpkin puree
  • 4 medium-sized oranges juice squeezed from the fruit
  • 7 tablespoons of sugar
  • 1 1/2 tablespoons of cinnamon
  • 11 gelatin leaves

For the chocolate cake

  • Break the chocolate, put it into a large bowl and pour a glass of boiling water over it. Set aside for 2 minutes and then mix well with a spoon. Mix the sifted flour with baking soda, baking powder and salt in another bowl. Set aside.
  • Pour the oil and natural yoghurt into a bowl with mixed chocolate. Add sugar. Mix everything by hand with a whisk. Then add the eggs and mix again until the ingredients are combined. Add the flour, baking soda and salt into the wet ingredients. Stir briefly until the flour is gone. Pour the dough into a 26 cm springform pan. Put in an oven preheated to 180 C for about 45 minutes or to a dry stick
  • After turning off the oven, slightly open the door for 10 minutes. Take the cake out of the oven and let it cool down. Use a sharp knife to cut off the top of the cake and set it aside for crumbling later.

For pumpkin mousse

  • Soak the gelatin leaves in cold water for about 5-7 minutes, then remove and squeeze lightly.
  • Heat the squeezed gelatin in a small bowl and dissolve it.
  • Beat the cooled cream with sugar. Add pumpkin puree and orange juice to the whipped cream. Mix well. Add the cinnamon and combine with the pumpkin mixture. finally add gelatin. Mix gently but thoroughly. Pour the pumpkin mousse onto the cake. Put in the fridge, to set. When the mousse becomes slightly set, sprinkle it with the crumbled chocolate cake. Put back in the fridge until the mousse is completely set.
